Progresso Broth Gift Basket Giveaway

We all know that the holidays are approaching....and fast! I love all of the yummy recipes that come with the holidays--dressing/stuffing, turkey, green bean casserole, chicken--I could really go on and on....


Along with the holiday season, we also have cold and flu season--yuck! Isabella and I have had horrible colds for a week now, and let me tell you, we are miserable.


I decided that tomorrow I am making us a delicious pot of homemade chicken noodle soup. Imagine my surprise when I got this in the mail today:

I am all about simplicity!!! So this isn't a very fancy recipe, but it's yummy!

Chocolate pretzel snaps-

A bag of square pretzel snaps

Unwrapped Hershey kisses

Bag of M&Ms

Heat oven to 200 degrees. On a cookie sheet, place unwrapped Hershey kiss on a pretzel snap. (As many as will fit!)

Place in oven and heat about 2 minutes, until the chocolate looks like it's melting a bit.

Take them out, and push one M&M on top of Hershey kiss so it squashes down a bit.

Let them cool, and enjoy!!!

Here's the toffee recipe: ngredients:
saltines
1 cup butter
1 cup brown sugar
chocolate chips
walnuts or pecans if desired

Preheat oven to 400
spray cookie sheet with Pam
line with saltines and set aside (allow some overlap)

On low heat, simmer butter and brown sugar until thickened
Spread mixture evenly over saltines
Bake 8-10 minutes
Immediately sprinkle with chocolate (and nuts). Place in oven for 2 minutes to melt chocolate.
Place cookie sheet in freezer for 15 minutes
Break into pieces and enjoy!
Store leftovers in fridge

This is so easy and it's always a hit!

Fabulous Pumpkin Cheesecake Bars

Ingredients:
1 (16 oz) pkg of pound cake mix (I like Betty, hers is the most moist)
2 TBSP butter, melted
1 (8 oz) pkg cream cheese, softened
1 (16 oz) can of pumpkin
1/2 tsp of salt
3 eggs
4 tsp pumpkin spice
1 (14 oz) can condensed milk (Not evaporated! Trust me on this...)
1 cup of chopped nuts (optional)

Preheat oven to 350 degrees.

In a large bowl combine cake mix, 1 egg, butter, 2 tsp of pumpkin pie spice, until crumbly.
Press onto bottom of a 15"x10" pan and set aside

In a different large bowl (or the same, who am I to say?) beat cream cheese until it's fluffy. It will put up a fight, make sure you condition this arm well.

Gradually beat in condensed milk, then the 2 eggs, pumpkin, 2 tsp pumpkin spice, and salt. Mix it all well.

Pour over the crust, sprinkle the nuts on top.

Bake about 30 minutes (took me 50 the other day...just watch until they are set) or until they are set well.

My favorite holiday recipe is Spicy Crackers - yum

1 oz dry ranch dressing mix
2 tsps red pepper flakes (more or less to taste)
1 cup oil (I use a olive/canola mix)
whole box of saltines

Throw saltines in a ziploc bag. Mix remaining ingredients and pour into bag of crackers. Seal. Turn bag every 5 to 10 minutes until crackers are saturated. Yum!

Homemade eggnog. I make it by buying a quart of lowfat eggnog at the store and then sprinkling nutmeg on it. OOooooo homemade and yummy

Recipe:
Peanut Butter Fudge

1 1/3 cup milk
4 cups sugar
7 oz. marshmellow creme
2 cups peanut butter
1 tsp vanilla

Combine milk and sugar; cook to soft ball stage.
Add marshmellow creme, peanut butter, and vanilla.
Mix quickly and pour into lightly butter dish/pan. Sets up quickly.

Score while warm, cut when cool.

YUM!!!

Oreo Truffles
8 oz. cream cheese, softened
4 cups crushed Oreo cookies
2 cups vanilla or chocolate baking chips
1 Tbs. shortening

On high speed of an electric mixer, beat cream chese until light and
fluffy. Add cookies and beat until well combined. Refrigerate 2
hours until chilled enough to roll. Roll dough into 1-inch balls.
Over double boiler, melt chips and shortening until smooth. Dip
balls and thoroughly coat. Place on wax paper to harden. Store in
refrigerator.

* 1 cup warm milk (110 degrees F/45 degrees C)
* 2 eggs, room temperature
* 1/3 cup margarine, melted
* 4 1/2 cups bread flour
* 1 teaspoon salt

* 2 1/2 teaspoons bread machine yeast
*
* 1 cup brown sugar, packed
* 2 1/2 tablespoons ground cinnamon
* 1/3 cup butter, softened

* 1 1/2 cups confectioners' sugar
* 1/2 teaspoon vanilla extract

DIRECTIONS

1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
3. Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
4. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving. Courtesy of Allrecipes

sweet potato treats- cut up clean sweet potatoes and spray with pam- easy peasy spinkle wiht a little cinnamon sugar ( I made splenda sugar) and bake until browned and down just like fries..kids love them- they are sweet and yummy- can also make them in circles- however you want them like chips

What a nice gift basket! My favorite holiday food is Syrian rice. It's something Dad always made for holidays and something I just need to have at least for Thanksgiving and Christmas. Just the smell of it cooking brings him back to share the holidays.

1 diced onion
1 diced celery
12 oz can drained oysters

sautee onion, celery and oysters in butter; add to stove top mixture; add some of the oyster juice; bake at 350 for 45 minutes covered

My favorite holiday recipe is so easy. Line a cookie sheet with parchment. Put mini pretzels down and top with a Rolo candy. Place in a 350 oven until the candy melts a little. Remove and top with a pecan half. Cool and you're done!

This is not sweets, but it's something I've made the past couple of years for holiday dinners.

Mushroom Stuffing
One and a half 1-pound loaves white bread, cut into cubes
1 1/2 bunches celery with leaves, coarsely chopped
3 sticks (12 ounces) unsalted
butter
1 1/2 onions, chopped
One 10-ounce package sliced white mushrooms
1 tablespoon coarse salt
3 tablespoons poultry seasoning
2 large eggs, beaten with 2 tablespoons water

Preheat the oven to 250°. Scatter the bread cubes on a baking sheet and bake, tossing occasionally, until dried but not browned, about 40 minutes. Let cool. Increase the oven temperature to 350°.

Working in batches, pulse the celery in a food processor until chopped but not minced.

In a large, deep skillet, melt the butter over medium-high heat. Add the onions and cook until translucent, about 10 minutes. Mix in the celery and mushrooms and cook over high heat, stirring frequently, for 10 minutes. Stir in the salt and poultry seasoning until thoroughly combined.

In a large bowl, toss the bread cubes with the beaten egg mixture. Add the vegetable mixture and toss until well combined.

Spoon the stuffing into 2 buttered 3-quart casserole dishes and bake, uncovered, for 40 minutes.

Sweet Potatoes and Applesauce (Crock Pot)

6 medium sweet potatoes or yams, peeled and cut into 1/2 inch cubes
1 1/2 cups applesauce
2/3 cup brown sugar, packed
3 tablespoons butter, melted
1 teaspoon ground cinnamon
1/2 cup nuts, toasted and chopped

Directions:

1 Place sweet potatoes in a 2 to 3 1/2 quart slow cooker.
2 Mix remaining ingredients except nuts; spoon over potatoes.
3 Cover and cook on low heat 6 to 8 hours or until potatoes are very tender.
4 Sprinkle with nuts.

Cucumber & Herb Dip

1 8oz package of softened cream cheese
1 cup finely shredded cucumber, well-drained
1/2 cup Kraft Shredded Swiss Cheese
1/2 tsp dill weed
1/2 tsp lemon juice
1/2 tsp minced garlic

Mix all ingredients together until well blended. Cover and refrigerate 2 hours.

Serve with crackers or fresh cut vegetables.

Here's the recipe for Aunt Jean's carrots: 1 lb. carrots, cut into large dice; 1 stick butter; 1/4 cup brown sugar; salt, pepper and honey to taste.

Cook carrots in water for 3 minutes in the microwave; drain and combine all ingredients in a small sauce pan. Simmer for 30 minutes.

Turkey Treats
These are cute and easy to make.
Ritz Cracker
canned frosting,
chocolate kiss,
candy corn
caramel.
Spread frosting on cracker. Peel the paper off the kiss and place kiss near the bottom of the cracker. add candy corn above the kiss to make feathers; place one corn on the kiss for the head. Let frosting dry. Attach a caramel to the back with more frosting to make it stand up.

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips

1. Preheat oven to 350 degrees F (175 degrees C).
2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour and chocolate chips. Drop by large spoonfuls onto ungreased pans.
3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

This tasty sweet potato casserole contains butter, vanilla, mashed sweet potatoes, brown sugar, butter, and pecans.
INGREDIENTS:
2 eggs
1 cup granulated sugar
3/4 cup butter, softened
1/2 cup milk
1 teaspoon vanilla
3 cups cooked mashed sweet potatoes
.
Topping
1/2 cup brown sugar
1/3 cup flour
2 tablespoons butter, softened
1/2 cup chopped pecans
PREPARATION:
Beat eggs, granulated sugar, and 3/4 cup butter. Add milk and vanilla. Combine with the mashed sweet potatoes; spoon into a greased 2-quart casserole. Combine brown sugar, flour, 2 tablespoons softened butter, and pecans, mixing until crumbly; sprinkle over sweet potatoes. Bake at 350° for 45 minutes.

A family favorite is an Oriental ambrosia salad we make with one large container of Coolwhip, a few drops of rum flavoring, a can of pineapple tidbits drained, a can of mandarin oranges drained, two fuyu persimmons chopped, a can of lychee nuts drained, and a 1/2 c. toasted almonds. Delish.

Recipe -

1 graham cracker crust
1 bar cream cheese
1 14 oz. can sweetened condensed milk
1/3 c. lemon juice
1 can cherry pie filling

Beat the condensed milk and cream cheese until well mixed. Add the lemon juice, mix well.
Pour into crust, and spread filling over top.
Refrigerate.
Yummy

Blueberry Salad
1 can (8 ounces) crushed pineapple in juice
2 packages raspberry Jello
3 cups boiling water
1 can (15 ounces) blueberries, drained
8 ounces sour cream
8 ounces cream cheese, softened
1/2 cup sugar
chopped pecans
Preparation:

Drain pineapple; reserve juice. Dissolve Jello in boiling water; stir in reserved pineapple juice. Chill until slightly set, about the consistency of unbeaten egg white. Stir in pineapple and blueberries. Pour into pan; chill until firm. Combine sour cream, cream cheese, and sugar; mix well until smooth and well blended. Spread over blueberry Jello salad and top with chopped pecans.

*3/4c mayonnaise
*2 cans minced clams(drainedBoth *Worchester sauce & lemon juice to your taste
*1 large pkg. cream cheese with chives
Assemble all ingredients in flat baking dish. Bake at 350 for 20 minutes. Yummy

Here is my recipe for Raisin Pecan Bread Pudding with Brandy Sauce

1 tablespoon Butter, for baking dish

2 cups Half and Half

3 cups (1/3 baguette) French bread, day-old, cut into 1 1/2 inch cubes

3 each Eggs

1/3 cup Sugar, granulated

1 1/2 teaspoon Vanilla extract

2 tablespoons Raisins, soaked in Cointreau or Kirsch

1 teaspoon Cinnamon, ground

1/4 teaspoon Nutmeg, grated

2 tablespoons Drack brown sugar

2 1/2 tablespoons Butter, cut into small cubes

1/4 cup Pecans, chopped

Directions:
1) Preheat oven to 350º F degrees.
2) Soak bread in one cup of the half and half for one hour.
3) Butter a 1-quart baking dish.
4) Beat remaining half and half with eggs, sugar and vanilla.
5) Add raisin and pour over the soaked bread, combine well.
6) Transfer to prepared 1-quart pan.
7) Combine, cinnamon, nutmeg, brown sugar and pecan. Sprinkle on top of pudding and dot with butter.
8) Bake 1 hour or until set. Allow to cool 30 minutes before cutting.
9) Serve with Brandy sauce or ice cream.

Brandy Ice Cream Sauce
Yield: 1 1/4 cup


1 cup Vanilla Ice Cream
2 Egg Yolks
1/4 cup Brandy

1) Over medium heat, melt the ice cream in a 10-inch sauté pan.
2) In a separate bowl, lightly beat the egg yolks. Slowly, add 1/4 to 1/3 cup of the hot melted ice cream to the egg yolks, whisk to combine well.
3) Return the egg yolk mixture back into the remaining hot ice cream.
4) Stirring constantly, return the sauce to a strong simmer. 2 to 3 minutes.
5) Add the brandy, mix well.
6) Remove from the heat and serve.

my favorite holiday side dish would be candy yams and all i do is go out and buy 4-5 whole yams and i pill and cut up then i put it in the crock pot i put 2 cups of sugar a dash of cinnamon , 2 tsp of nutmeg and then i put a lid on it and let cook till the potato are tender and the syrup is thick

Peppermint Brittle
1 package of almond bark
1 dozen candy canes (crushed)
red food color
Heat the almond bark until melted. Mix in almost all of the candy cane pieces, leaving an 1/8 cup or so to sprinkle on top. Mix thoroughly. Spread on a cookie sheet covered in wax paper. Drop a five to ten drops of the food color, evenly spread around the whole cookie sheet. Take a toothpick and drag the food color drops to make some red swirls in the almond bark. (I guess you could use any color but red is most festive) Then sprinkle the remaining crushed candy canes evenly over the top. Let cool and break into manageable pieces. Then try not to eat too many or you'll have to make more!

Easy Rocky Road recipe:

In a microwave safe bowl, dump:

One bag each of:
Chocolate chips, peanut butter chips, and butterscotch chips
And a 1/2 cup of peanut butter

Stir.
Add a jar of peanuts.
Add a bag of mini marshmallows

Spread and cool (sometimes I use the freezer)

Break or cut apart.

YUMMY!

P.S. Feel free to try different chips and nuts.

Corn Flake Cookies is my absolute favorite

1 C white Sugar
1 C Light Corn Syrup
12 oz Creamy Peanut Butter
4 C Corn Flakes

Mix sugar and syrup on stove, on low heat, stirring often. Heat until sugar is dissolved.
Stir in flakes and peanut butter. Turn heat off.
Drop on waxed paper and cool!
YUM!
and SO easy!

The thing my family likes the most is Drum Cake. Basically it is a torte-which is like a sponge cake and you keep making many layers in round cake pans and ice each with choclate icing. It is their favorite cake even though it is time consuming.

INGREDIENTS:
2 (8 ounce) containers candied
cherries
1 (8 ounce) container candied
mixed citrus peel
2 cups raisins
1 cup dried currants
1 cup dates, pitted and
chopped
2 (2.25 ounce) packages
blanched slivered almonds
1/2 cup brandy
1/2 cup all-purpose flour 2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup butter
2 cups packed brown sugar
6 eggs
3/4 cup molasses
3/4 cup apple juice

DIRECTIONS:
1. In a medium bowl, combine cherries, citrus peel, raisins, currants, dates, and almonds. Stir in brandy; let stand 2 hours, or overnight. Dredge soaked fruit with 1/2 cup flour.
2. Preheat oven to 275 degrees F (135 degrees C). Grease an 8x8x3 inch fruit cake pan, line with parchment paper, and grease again. In a small bowl, mix together 2 cups flour, baking soda, cloves, allspice, cinnamon, and salt; set aside.
3. In a large bowl, cream butter until light. Gradually blend in brown sugar and eggs. Mix together molasses and apple juice. Beat into butter mixture alternately with flour mixture, making 4 dry and 3 liquid additions. Fold in floured fruit. Turn batter into prepared pan.
4. Bake in preheated oven for 3 to 3 1/2 hours, or until a toothpick inserted into the center of cake comes out clean. Remove from pan, and lift off paper. Cool cake completely, then wrap loosely in waxed paper. Store in an airtight container.

So the Dilled Green Beans is not my recipe, but it is so good: From The Tasting Table: Dilly Beans
1 lb green beans, ends trimmed
2 lg garlic cloves, peeled and mashed
10 sprigs fresh dill
1 tsp red pepper flakes
1/2 tsp dill seeds
1/2 tsp mustard seeds

In a covered pot, steam beans over boiling water for 5-7 minutes. Rinse them in cold water and drain. Place beans in a glass or ceramic bowl. Add the garlic, dill, red pepper. (I couldn't find the seeds.)

Marinade as follows:

1 cup cider vinegar
1 cup water
3 T. sugar
1/2 tsp salt

Combine the marinade ingredients in a glass, enamel or stainless steel saucepan. Bring them to a boil. Pour the hot marinade over the beans, and let the mixture cool. Cover the bowl and refrigerate the beans for 10 hours or longer. To serve, remove the beans from the marinade which may be used again to store the leftovers or make a new batch of beans.

3/4 cup all-purpose flour
1 cup white sugar
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 cup pumpkin puree
3 eggs
1 teaspoon lemon juice
2 tablespoons confectioners' sugar

1 (8 ounce) package cream cheese, softened
1/4 cup butter
1 teaspoon vanilla extract
1 cup confectioners' sugar

Preheat oven to 375 degrees
Grease and flour a 9x13 inch jelly roll pan or cookie sheet (It helps to line with waxed or parchment paper).
In a large bowl, mix together flour, sugar, baking soda, and pumpkin pie spice. Stir in pumpkin puree, eggs, and lemon juice. Pour mixture into prepared pan. Spread the mixture evenly.
Bake at 375 degrees for 15 minutes.
Lay a sheet of waxed paper on counter and sprinkle it with confectioner's sugar, and turn the cake onto the prep paper. Carefully roll the paper up (lengthwise) with the cake in it. Place the cake on a cooling rack and let it cool for 20 minutes.
Make the icing: In a medium bowl, blend cream cheese, butter, vanilla, and sugar with a wooden spoon or electric mixer.
When the cake has cooled 20 minutes, unroll it and spread icing onto it. Immediately re-roll and sprinkle with powdered sugar. Cut the cake in slices just before serving.

Artichoke Dip recipe

Mix 1 can artichoke hearts (7 oz.)chopped. Add 1/2 cup parmesan cheese, 1/2 cup mayonaisse, 6 oz shredded mozzarrella sprinkle onion salt and garlic salt. Mix together and spread in pie pan Bake for 20 minutes. Enjoy

melt the PB and butter 1-2 mins in microwave then mix all together in a bowl with powdered sugar and stick in fridge

get your fave. peanut butter cookie recipe or the log of dough at the store... unwrap rolos get enough dough to totally cover the rolo so you can not see it in the middle of the cookie roll he ball in sugar and bake as normal... and what you get is this chocolate carmel peanut buter cookies that is to die for :)

Apple Butter Pumpkin Pie

1 cup apple butter
1 cup fresh or canned pumpkin
1/2 cup packed brown sugar
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger
3 eggs, slightly beaten
3/4 cup evaporated milk
1 unbaked 9-inch pie shell
Sweetened whipped cream, for garnish


Preheat oven to 425 degrees F.
Combine apple butter, pumpkin, sugar, salt and spices in a bowl. Stir in eggs. Gradually add milk and mix well. Pour into pie shell. Bake for about 40 minutes or until set.with aluminum foil
Cover edges of crust with aluminum foil if they are getting done too quickly.

1. In a large bowl, mix together pudding mix, pineapple with juice, marshmallows, and nuts. Fold in whipped topping. Chill.

Green bean casserole: compliments any main course; easy to prepare; tastes delicious.

Ingredients:
1. Green beans - any way you like them - fresh, cut, french style
2. Cream of mushroom soup - add liberally, just don't drown the beans
3. French fried onions - a tasteful topper

Mix green beans and soup and heat in oven to desired temperature.
Add French fried onions and let set for just a few minutes to marinate flavors. Serve and enjoy :)

Here's the recipe:

2 (16 oz.) cans or 1 (29 oz.) can cut yams or Royal Prince
5 tbsp. butter
13 c. brown sugar, firmly packed
1/3 c. chopped nuts (optional)
1 c. miniature marshmallows (optional)

Stove top directions. Pour sweet potatoes and liquid into 2 quart sauce pan. Cook until are heated through. Drain liquid and set aside. While sweet potatoes are heating combine butter and brown sugar in 1 quart sauce pan and cook until hot, but not boiling. Add nuts to sauce if desired and pour over hot sweet potatoes. Stir just to coat. Serve immediately.

5 MINUTE FUDGE

No beating! Can't fail!
No thermometer or soft-ball tests needed!

Mix in saucepan over medium heat:


2/3 c. (1 sm. can) undiluted Carnation evaporated milk
1 2/3 c. sugar
1/2 tsp. salt

Bring to boil; cook 5 minutes, stirring constantly. (Time when mixture starts to "bubble" around edges of pan.) Remove from heat.
Add:


1 1/2 c. (16 med.) diced marshmallows
1 1/2 c. semi-sweet chocolate pieces
1 tsp. vanilla

Stir vigorously for 1 minute (or until marshmallows melt).
Pour into 8 inch square buttered pan.

Garnish with nuts, if desired.

Cool.

Makes about 2 pounds.

I have a recipe for some chocolate peanut butter bonbons that are delish, but they take a long time to make, so I only do them up for the holidays. They go great in gift tins, too.

Ingredients:

* 2/3 cup hot water
* 10 ounces Swiss Miss Milk Chocolate Hot Cocoa Mix
* 18 ounces Peter Pan Creamy Peanut Butter
* 1/2 cup light corn syrup
* 3 cups sifted confectioners' sugar, divided
* 4 cups crushed vanilla wafers
* Baking Spray

Directions:

Whisk together water and cocoa mix in large bowl until smooth. Stir in peanut butter and corn syrup. Add 2 cups confectioners' sugar; blend. Stir in crushed vanilla wafers.

Spray large piece of waxed paper with baking spray. Drop heaping teaspoonfuls of chocolate mixture onto paper; set aside. Place remaining confectioners' sugar in shallow dish. Roll each piece of chocolate mixture in sugar and roll into balls.

Chill before serving. Store in an airtight container.
